The premise is appealingly constrained: build something worthwhile using just two fence pickets. Pickets are cheap, warped, knotty, and rough — which makes them a great teacher. Working around defects, jointing crooked stock flat, and hiding weak grain are skills you don't learn from clean hardwood.

Small-channel picket builds tend to walk through the whole flow honestly: ripping, planing, glue-ups, joinery choices, and finishing, all with realistic tool constraints (typically a table saw, drill, and sander rather than a full pro shop). That makes the techniques directly transferable for a beginner or intermediate woodworker with a modest garage setup.

It's also a good design exercise — figuring out what a 5.5"-wide, ~6-foot board can become (a shelf, planter, side table, tray) forces you to think about proportion and material yield before cutting.
